How do Emulsifiers work? – Types and Uses

Emulsifiers happen to be food additives meant for stabilizing emulsions. They are a combination of water and oil such as mayonnaise and butter. Emulsions actually bind oil and water within an emulsion, thus giving it stability. They are helpful in processing food items very easily.

Why emulsifiers are required to stabilize an emulsion?
An emulsion contains oil as well as water which has been dispersed as well as suspended. Usually when oil and water are mixed they tend to separate. An emulsifier actually prevents the separation of water as well as oil into two separated layers. The emulsifier
keeps both water and oil suspended.

Types of emulsions

  • Water in oil emulsions – It contains droplets of water dispersed in oil.
  • Oil in water emulsions – This contains droplets of water dispersed in oil.

How do these emulsifiers work?
Emulsifiers molecules consist of two different ends. One of the end is hydrophilic (which favors water) and other is lipophilic that which favors oil). When we add an emulsion to an emulsion (mixture of oil as well as water), the emulsifier stabilizes the mixture.

In an oil-water emulsion, the emulsifier tends surround the oil droplets, preventing it from forming separate layer. In the case of water-in-oil emulsion, the emulsifier actually surrounds the droplets of water and thus prevents it from forming a separate layer.

How to use emulsifiers?

  • Bread making – Emulsifiers can be used to improve the texture, quality and improve the shelf of life of the bread.
  • Dairy products – Emulsifiers can be used in dairy products such as ice cream, cheese, whipped cream, foam formation as well as emulsion formation.
  • Sugar confectioneries – Emulsifiers area also used to improve crystallization as well as texture in caramels, toffees and chewing gums.
  • Sauces – These emulsifiers are also used in mayonnaise, sauces, dressing sauces, dressings and peanut butter.

Other purposes:
Emulsifiers are also used in producing, biscuits, soft drinks, snacks and breakfast cereals. These are also important food additives, without which one cannot eat many of the foods.
